Bacon-wrapped Bourbon Honey Glazed Chicken Lollipops on the BGE MiniMax

Make sure to stoke the fire up with Jealous Devil Charcoal and throw in some Bourbon Barrel Chips for an added bourbon flavor! This sauce alone is amazing with a combination of onion, ketchup, honey, Chile poder, paprika, pepper, brown sugar, Worcestershire, Dijon, and of course, a healthy shot of bourbon! It's so easy, fast and delicious – you may want to double the recipe! Bacon wrap the lollipops and glaze at the end! I served these with Grilled Herbed Smashed potatoes! Yum!

Servings 2 people

Ingredients
  

  • ¼ cup butter
  • ½ cup white onion, chopped finely
  • 1 cup ketchup
  • ¼ cup honey
  • 2 tbsp dark brown sugar
  • 1 tbsp Worcestershire
  • 1 tbsp Dijon mustard
  • 2 tsp freshly ground black pepper, divided
  • 2 tsp chile powder, divided
  • 2 tsp paprika, divided
  • ¼ cup bourbon
  • 1 tsp kosher salt
  • 12 pieces bacon
  • 6 chicken drumsticks, cleaned for lollipops

Instructions
 

Step One

  • Melt butter in saucepan over medium heat. Add onion, and saute until soft. Add ketchup, honey, dark brown sugar, Worcestershire, dijon, 1 tsp black pepper, 1 tsp chile powder, 1 tsp paprika. Reduce heat to low, and simmer until sauce thickens (about 20 minutes). Add bourbon, stir until well mixed and simmer for another 3 minutes. Put half in bowl to serve for dipping sauce, and the rest will be used to glaze while cooking. Cover and chill until ready to use.

Step Two

  • Mix salt, 1 tsp black pepper, 1 tsp chile powder, 1 tsp paprika in small bowl. Loosen skin on drumsticks and rub mixture under the skin. Wrap 2 slices of bacon around each drumstick.

Step Three

  • Start your grill. Grill drumsticks until skin is crispy and juices run clear, and until internal temperature reaches 165°F. Brush drumsticks with sauce and grill for another 5 minutes. Remove from grill and enjoy!

Boozy Brazilian Lemonade

This is the perfect welcome cocktail to any Brazilian summer soiree! Don't be fooled, it's not made with lemons but rather limes. And not just lime juice, but actually, the whole lime, skin and everything! With one sip, this creamy lime cocktail will make you fell like you're on vacation!

Equipment

  • Blender

Ingredients
  

  • 4 large limes ends cut off, and thinly sliced
  • 1 cup sugar
  • 6 cups cold water
  • 1 14 oz can sweetened condensed milk
  • 2 oz rum per coctail, can use Coconut Rum, or white rum

Instructions
 

Step One

  • Mix water and sugar. Place half of this into a blender, along with two of the limes. Blend thoroughly..
    Place wire strainer over pitcher, and strain mixture to catch pulp. Discard pulp.
    Repeat steps above with the other half of water/sugar/limes.

Step Two

  • Add the sweetened condensed milk to the lime/sugar mixture in the pitcher. Stir until very well mixed, and chill until ready to serve.

Step Three

  • Fill each glass with ice, and add rum. Pour drink mixture into the glass, and stir. Garnish with lime slice.

Spiced Vanilla Pear Cocktail

This cocktail has all the fall flavors and gets you nice, warm and cozy for the cooler season! While making the spiced vanilla pear simple syrup, the whole kitchen will smell of beautiful fall aromas like vanilla, cloves, star anise, ginger and orange. The simple syrup combined with pear nectar, vodka and club soda makes this cocktail perfect for sipping outside by your fire pit on a nice crisp fall evening!
Prep Time 30 minutes
Cook Time 15 minutes

Servings 4 cocktails

Ingredients
  

  • 1 ½ cups pear nectar
  • ¾ cup vodka
  • 4 tbsp spiced vanilla peark simple syrup*
  • ice
  • star anise, candied pear slices garnish

Instructions
 

Making the Spiced Vanilla Simple Syrup:

  • Combine water, sugar, diced pears, vanilla bean (include extracted seeds and pod), sliced ginger, cloves, orange peel and star anise in a small pan. Heat to a low boil, and stir until sugar has dissolved, turn off heat, cool and let rest for at least 20 minutes. Strain and discard solids.

Assembling the cocktail

  • Fill cocktail shaker with ice, pear nectar, vodka and vanilla spiced simple syrup.
  • Shake vigorously, strain into ice filled glasses.Garnish with star anise, and candied pear slices (click here for a how-to on how to make candied pear slices)

What is Bjorn Bites and Booze all about?

Let me introduce myself! My name is Sara Line Bjorn Frisk.

Bjorn Bites & Booze

I think of myself as a wild west viking combining my love of the Rocky Mountains, and my Danish heritage. I am a dual citizen of America and Denmark. My love is for both countries for their beauty, culture, history and food. My desire for this website is to combine both of these loves in a manner that makes sense to me to bring to you.

I would like to say that I am a true Renaissance-worman, a woman of many loves and talents. Love of life, travel, nature, real estate and talents for creating fabulous dishes, cocktails, entertaining, and finding people homes.

My Background

Born in United States of Danish parents, where my first language, Danish, was only spoken until I turned four. Then moving on to Quebec, where my second language, French was introduced. Our family lived in a predominantly French small-town, where the only English-speaking school served kids from surrounding towns, I then learned English. We then moved on to beautiful Copenhagen, where we lived for 4 year glorious years. The day my dad told me we were moving to Colorado, I exclaimed “Where’s that? Africa?” not knowing where in the world Colorado was!

I lived in Colorado and graduated High School, then moved on to Seattle for a bit with the intent of going to university. A professor persuaded me that maybe “University life” wasn’t quite for me, and put the thought in my head that I should move back to Copenhagen. As a young and impressioned adult, I moved back to Europe for a couple of years. Countries included Denmark, Sweden and Switzerland, where I ended up going to Hotel Management School in the Alps.

I then moved back to Colorado, started an internship with The Brown Palace, and went on to work for the Hyatt, and Wyndham Hotels in Chicago.

After deciding that the hotel industry wasn’t quite what I had envisioned, I went to work for my dad, who is a brew master and beverage consultant. I took on many projects, one that included starting an Import company where we imported European beers, wines and spirits. One big project that we undertook was the creation of Kaltenberg Castle Brewery in Vail, Colorado. This 400-seat restaurant/brewhouse built in the old Lionshead gondola building was the talk of the town for many years, although it no longer exists. I have many favorite memories of working with Austrian brew masters, Bavarian chefs and of course, Prince Luitpold of Bavaria.

Fast-forward through getting married, having two children, working as a Music Director at local church and starting a Website & Graphic Design company. I know have two college-age kids and found myself wanting more. I studied and worked for a real estate license, and have been a realtor since 2017. And finally during COVID I decided that my love and hobby of entertaining, making food, and beverages became something that I wanted to share in the form of Instagram.

In between all of these, my travel bug has been taken to new levels. Whether that be hiking a 14’er in my own backyard, or traveling across the ocean to Europe, Cambodia, or wherever my heart decides to take me. One can find me out in the mountains a least a couple of times a month, nature bathing is very important for the soul you know.

Bjorn Bites & Booze was born – to share with you, and who ever might be interested about reading about my adventures, whether they be in the mountains, across the seas, in my kitchen, or in finding people their forever homes.
