Crags Hotel Ruins & Continental Divide Overlook

Eldorado Canyon is only a quick 20 minute drive from where I live, and love every time I get to take someone there for a hike. The drive to get to the entrance of Eldorado Canyon State Park is filled with rolling hills, and expansive views of the Flat Irons. Then as you slowly (and please drive slow for the sake of the residents who live there) approach the tiny little “town” of Eldorado, you notice lots of cute houses, gardens filled with mountain flowers, and neighbors talking to neighbors. Before you know it, you are through the little town, and start the ascent up to the canyon where you need to buy a day pass (or if you have a yearly pass). It’s $10 for a day pass, and usually someone is at the park entrance to take your payment, answer any questions you may have and provide you with a map.

As we drove in, climbers were already starting to make their way up the steep mountains with their technical rock climbing within the massive canyons and panoramic vistas. We were lucky to find a good parking spot up towards the top, got our hiking gear on, and made our way to the trail. There are some informational signs along the way describing the vegetation, animals, etc., which is great for first time or out-of-state visitors. Fowler Trail is well kept, and the ascent starts up towards the ruins of Crags Hotel! There isn’t much left of Crags Hotel, but signs explaining the history of the hotel and area mark the spot, and offer a chance to rest and take a breath. Continuing on up the trail, don’t miss it – as you only have to hike about 10 minutes more for the Continental Divide Overlook. Benches are a welcome sight to those that maybe want to take a longer break up at the top to admire the view, eat some snacks (don’t share any with the greedy little chipmunks), and don’t forget the water! The upper loop of the Rattlesnake Gulch Trail is currently closed so it made our hike a little shorter than anticipated, but the hike was wonderful no matter how short it was! Views towards the snow-covered peaks of the Continental Divide were definitely calling and made it easy to talk about our ambitious hiking plans for the summer! Towards the east, you can admire the views of downtown Denver, and always appreciate the expansiveness of the ‘low lands’ below.

As we were leaving (around 11am) the cars were already lined up waiting to be let in to the park. There isn’t a lot of parking so plan on getting to the canyon as early as possible as there is limited parking for sure.

Pineapple Elderflower Martini

Three simple ingredients to create this amazing cocktail. Homemade pineapple infused vodka, St. Germaine Liqueur and pineapple juice, shaken vigorously until chilled and frothy, then strained in a martini glass! A refreshing, sweet, and delicious cocktail for any night of the week!
Prep Time 5 minutes
Course Drinks

Ingredients
  

  • 2 oz Pineapple Infused Vodka (purchased or homemade)
  • 1 oz St. Germaine Liqueur (elderflower liqueur)
  • 3 oz Pineapple juice
  • Pineapple wedge, mint for garnish

Instructions
 

  • Add all ingredients in a shaker filled with ice. Shake vigorously until chilled and frothy (for 30 seconds at least). Strain into martini glasses, garnish with pineapple wedge and mint and serve!

Pineapple Mango Raspberry Swirl Frozen Margarita

Cinco de Mayo is celebrated in full style with this delicious, sweet and tangy frozen margarita. The frozen cocktails are perfect for casual parties or lazy Sunday afternoons! Making them with frozen fruit is even easier!
Course Drinks

Ingredients
  

Margaritas

  • 2 cups frozen mango chunks
  • 2 cups frozen pineapple chunks
  • cup orange juice
  • cup simple syrup
  • ¼ cup lime juice
  • 8 oz Tequila (or more if you like your margaritas stronger)
  • 2 cups crushed ice
  • 2 tbsp raspberry sauce

Raspberry Sauce

  • 3 cups fresh raspberries
  • ½ cup sugar
  • ½ lemon, juiced

Instructions
 

Make Raspberry Sauce

  • Clean and dry raspberries. Add to a food processor and blend until completely smooth.
  • Strain mixture through a sieve into a sauce pot.
  • Place sauce pot over medium heat, and add sugar and lemon juice. Bring to a low boil, and cook for about 15 minutes, until mixture has reduced about half and thickened.
  • Cool completely, and store in fridge until ready to use.

Assemble Margaritas

  • Add frozen fruit, orange and lime juices, simple syrup and tequila to blender. Blend until smooth.
  • Add ice, and blend until smooth and frothy.
  • Take raspberry syrup and swirl the inside of margarita glasses.
  • Fill margarita glasses with the pineapple-mango mixture. Top with pineapple wedge and a fresh raspberry.

Avocado Toast with Grilled Beet Hummus

Who doesn't love Avocado Toast? Super trendy right? But let's take this up a notch add some homemade Grilled Beet Hummus. The beets were grilled on the Big Green Egg over red hot Jealous Devil Charcoal! The grilled beets provide an added smoky flavor with a slight caramelized sweet coating. I created an avocado rose to sit on top off the luxurious Beet Hummus, added some alfalfa sprouts, sliced radishes, pine nuts, and crumbled feta on a piece of toasted multi-grain bread, and oh my goodness! So good!
Course Appetizer, Main Course

Ingredients
  

Grilled Beet Hummus

  • 2 medium beets
  • 1 tbsp olive oil

Supplies for Avocado Toast

  • 2 slices multi-grain bread
  • ½ cup prepared beet hummus
  • 1 avocado, pitted
  • 1 radish, thinly sliced
  • ½ cup alfalfa sprouts
  • 1 tbsp crumbled feta cheese
  • 1 tbsp pine nuts, for garnish
  • salt & pepper to taste

Instructions
 

Grilled Beets

  • Heat grill to 350°
  • Wash and peel beets. Place on large piece of heavy duty aluminum foil. Rub olive oil over beets, and wrap the foil around the beet
  • Place foil wrapped beets on grill. Grill for 60 minutes or until beets are tender.

Make Avocado Toast

  • Slice thinly, and toast the bread
  • Spread a generous amount of hummus on each piece of bread.
  • Slice the avocado thinly, and lay on top of the hummus (or make an avocado rose to sit on top of the hummus)
  • Add sprouts on top of avocado, sprinkle feta cheese on top, pine nuts, and sliced radishes. Salt + pepper to taste. Serve immediately.

Snowshoeing at Snow Hare Trail, Golden Gate Canyon State Park

Amazing bluebird skies, a little windy but a wonderful 4-mile winter hike in the beautiful snow!

Snow Hare Trail is located inside Golden Gate Canyon State Park. Daily park passes are $10 per vehicle and can be purchased at the self-service kiosk at the parking lot or entrance into the park.

This trail is a well marked, forested trail with views here and there, some rolling hills with steep inclines to get the heart going. The sun peaked in and out of the snow packed trail, and definitely glad to have snow shoes as there were some deep pockets.

Plan on getting to the trail early (we arrived at 8:30 a.m.) as parking spots are limited, especially at this time of the year when the service road is closed.

This trail would also be great for a spring/summer/fall hike, with a quick snack/lunch break at Dude’s Fishing Hole.

Ingredients
  

Ingredients

  • 2 whole Cornsih Game Hens, washed, dried, and spatchcocked

Moroccan Spice

  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp cayenne pepper
  • ½ tsp chili powder
  • ½ tsp red pepper flakes
  • ¼ tsp salt
  • ½ tsp black pepper

Marinade

  • 2 tbsp Moroccan Spice (see above)
  • 2 tbsp parsley, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • salt & pepper to taste

Garnish

  • parsley, chopped
  • lemon slices

Instructions
 

  • Combine all ingredients together in a bowl, stir to mix. Place mixture in a shallow bowl, and add Cornish Game Hens, rubbing mixture all over game hens, and let them marinate at least 30 minutes or overnight.
  • Prepare the grill, clean grates and heat to 350°F
  • Place Cornish Game Hens skin side down, to get a crispy skin. Grill for 15 minutes, and flip, grill for another 15 minutes or until internal temperature is 165°F. Check temperature with the meat thermometer.
  • Serve with chopped parsley, lemon slices, herbed rice and blistered tomatoes.

The perfect balance between the fresh grapefruit juice, added punch from the Elderflower liqueur, sweetness from the Elderflower syrup and a little sparkle from the Elderflower lemonade.

  • 6 oz Fresh Pink Grapefruit Juice
  • 1 oz Elderflower syrup

  • Combine everything in a cocktail shaker full of ice. Shake, serve in cocktail glass filled with ice.

Pineapple Firecracker Chicken

Grilled this amazing Pineapple Firecracker Chicken dish on my Big Green Egg using a wok! Wok cooking is super fast and easy! This dish will beat any takeout dish hands down, with tender chunks of chicken and a great balance of the fiery sweet and spicy sauce!

Ingredients
  

Ingredients

  • 1 lb. boneless, skinless chicken breast, diced into bite size (substitute tofu, pork, or shrimp)
  • 1 white onion, chopped
  • 4-5 cloves garlic, minced
  • 4 cups multi-colored bell peppers, chopped
  • 1 cup pineapple, chopped
  • 1-2 hot peppers, thinly sliced (I used red fresno peppers, but can use Thai chili peppers depending on how spicy you liked it)
  • salt & pepper to season your protein
  • vegetable or peanut oil for your wok/pan

Sauce

  • ½ cup Pineapple Juice
  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tbsp plum sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 2 tsp Sriracha sauce
  • 1 tsp red pepper flakes
  • 1 tbsp cornstarch

Garnish

  • 5 green onions, thinly sliced
  • sesame seeds

Instructions
 

  • Heat grill to high heat, and place wok in your Big Green Egg (or grill) to heat up.
  • Mix all ingredients for sauce in a bowl, whisk together ingredients and set aside.
  • Season chicken (or protein) with salt and pepper.
  • Heat 2 tbsp of oil in your Big Green Egg wok to heat up.
  • Cook chicken in your wok until done. Remove from pan.
  • Saute onion, garlic, and ginger for about 3-5 minutes, until onion is softened.
  • Add pepper, both sweet and hot, to pan and stir fry for a couple of minutes.
  • Add chicken back to wok, and add pineapples.
  • Pour sauce over ingredients, and cook until sauce thickens, and has coated all ingredients.
  • Serve over rice, garnish with sliced green onion, and sprinkle with sesame seeds.

  • 1 tbsp muddled raspberries (fresh)
  • 1 oz Cointreau
  • 1 tbsp simple syrup
  • Champagne to top off glass
  • Fresh blueberries and mint for garnish

Instructions
 

  • Add muddled raspberries and simple syrup to champagne flute. Add ice.
  • Pour in Aperol on the side of the glass so it flows to the bottom.
  • Top off with champagne carefully.
  • Garnish with blueberries and mint.
